Winter Vegetable Poaching (Vegetarian, Vegan)

This warm and comforting winter vegetable poaching recipe is a delicious way to incorporate seasonal veggies into your diet. It makes a great one-pot meal for chilly nights.

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 stalks celery, thinly sliced
  • 2 carrots, peeled and diced
  • 1 parsnip, peeled and diced
  • 3 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 potatoes, peeled and diced
  • 1 cup frozen peas

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 5 minutes until softened. Add the celery, carrots, and parsnip and cook for an additional 5 minutes. Pour in the vegetable broth, thyme, bay leaf, salt and pepper.

Bring the mixture to a boil then reduce heat to low. Simmer for 15 minutes or until vegetables are tender. Add in the potatoes and frozen peas and simmer an additional 10 minutes or until potatoes are cooked through.

Serve with crusty bread or toast.
