White Chicken Tajine with Olives

This white chicken tajine recipe is a classic and flavorful dish. The combination of olives, spices, and chicken makes for a delicious meal. Add a side of couscous or rice to complete the meal.

  • 1 whole chicken, cut into pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon chili powder
  • 1/2 cup white wine
  • 3 cups chicken broth
  • 2 cups pitted green olives

In a large pan, heat the olive oil over medium heat. Add the onion and garlic and cook until softened. Add the spices and stir for about one minute, or until fragrant. Add the chicken pieces and cook until lightly browned on all sides.

Add the white wine and let it simmer for a few minutes. Pour in the chicken broth and bring to a boil. Reduce to a simmer and add the olives. Cover and let simmer for 25-30 minutes, or until the chicken is cooked through. Serve with couscous or rice.
