Vegetarian Raclette with Local Cheeses

This vegetarian raclette recipe is the perfect way to bring a taste of Switzerland into your home. Made with local cheeses and other tasty ingredients, it makes for an amazing dinner or lunch option. Enjoy!

  • 2 potatoes, sliced
  • 1 onion, diced
  • 1 cup mushrooms, diced
  • 1 tablespoon olive oil
  • 2 cups grated cheese of your choice (local cheese is recommended)
  • Salt and pepper to taste

Preheat the oven to 350F. Spread the sliced potatoes out on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper and bake for 20 minutes.

While the potatoes are baking, heat a large pan over medium-high heat. Add in the onion and mushrooms and cook until golden brown, about 5 minutes. Add salt and pepper to taste.

Once the potatoes are done baking, spread them out on an oven-safe dish or skillet. Top with the cooked onion and mushroom mixture, followed by the grated cheese.

Place in the oven for 10-15 minutes until cheese is melted and bubbling.

Serve hot with your favorite sides.
