- 3 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 pound mushrooms, sliced
- 1/4 cup walnuts, chopped
- 1 (14 ounce) can diced tomatoes
- 2 tablespoons tomato paste
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- Salt and pepper to taste
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes. Stir in the mushrooms and walnuts and cook until the mushrooms are softened, about 5 minutes more.
Stir in the diced tomatoes, tomato paste, oregano, and basil. Bring to a simmer and cook for 10 minutes. Season with salt and pepper to taste.
