Vegetarian Mushroom and Walnut Spaghetti Sauce

This vegetarian spaghetti sauce is an easy and delicious way to enjoy pasta night. Packed with mushrooms, walnuts, and herbs, it’s a flavorful dish that everyone can enjoy. Serve it over your favorite pasta for a hearty meal.

  • 3 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound mushrooms, sliced
  • 1/4 cup walnuts, chopped
  • 1 (14 ounce) can diced tomatoes
  • 2 tablespoons tomato paste
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • Salt and pepper to taste

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes. Stir in the mushrooms and walnuts and cook until the mushrooms are softened, about 5 minutes more.

Stir in the diced tomatoes, tomato paste, oregano, and basil. Bring to a simmer and cook for 10 minutes. Season with salt and pepper to taste.

Serve over cooked spaghetti or other pasta of your choice.
