Vegetarian Courgette Frittata

  • 3 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 large courgettes (zucchini), diced
  • 1 red bell pepper, diced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 eggs, beaten


  1. Preheat oven to 375°F.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat.
  3. Add onions and garlic and cook until softened, about 5 minutes.
  4. Add courgettes, bell pepper, salt, and pepper and cook until vegetables are tender, about 10 minutes.
  5. Stir in beaten eggs and cook for 2 minutes more.
  6. Transfer skillet to preheated oven and bake until frittata is set, about 15 minutes.
