Vegetable Stuffed Swiss Chard with Mint Sauce

This vegetarian dish is a delicious combination of Swiss chard stuffed with a flavorful herbed cheese filling, served with a creamy mint sauce. It makes for an elegant and satisfying meal!

Ingredients:

  • 2 bunches Swiss chard
  • 4 ounces cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • For the mint sauce:
    • 3 tablespoons butter
    • 3 tablespoons flour
    • 1 1/2 cups chicken broth or vegetable broth
    • 1/4 cup chopped fresh mint leaves
    • Salt and pepper to taste

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.< li > Trim the stems from the chard and cut off any rough edges. Place leaves in boiling salted water for about 3 minutes until just wilted. Drain and pat dry.< li > In a medium bowl, mix together cream cheese, Parmesan cheese, garlic, oregano, salt, and pepper.< li > Place 1 tablespoon of the cheese mixture in the center of each chard leaf. Roll up each leaf like a burrito and place seam-side down in the prepared baking dish.< li > Bake uncovered for 25 minutes.< li > Meanwhile, prepare the mint sauce. In a medium saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute. Gradually stir in broth until smooth. Simmer until thickened, about 5 minutes. Stir in mint leaves and season with salt and pepper.< li > Serve stuffed chard rolls with mint sauce over the top.
