This Vegetable and Ricotta Filo Pie is a delicious vegetarian dish. It’s made with filo pastry, ricotta cheese, vegetables, herbs, and spices. The vegetables give the pie a great texture and flavor. Serve this as a main course or side dish for dinner.
- 1 package of filo pastry
- 2 cups of ricotta cheese
- 2 cups of diced vegetables (carrots, celery, onions)
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Preheat oven to 350°F (175°C). Grease a 9-inch pie dish with butter.
In a large bowl, mix together the ricotta cheese, vegetables, oregano, thyme, salt and pepper.
Lay out one piece of filo pastry on the greased pie dish. Spread half of the ricotta mixture over the pastry. Layer another piece of pastry over the top and repeat with remaining ricotta mixture.
Fold edges of pastry over to seal in the filling. Brush top with melted butter and sprinkle with some dried herbs if desired.
Bake in preheated oven for 30 minutes or until golden brown.
Serve hot or cold with a salad.
