This delicious vegetable and chicken soup is easy to make and full of flavor. It’s great for a cold winter night or just when you’re feeling in the mood for a warm bowl of soup. It’s sure to hit the spot!
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 red pepper, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 4 cups chicken broth
- 1 can (14.5oz) diced tomatoes
- 2 cups cooked chicken, diced
- 1 cup frozen green beans
- Salt and pepper to taste
In a large pot over medium heat, sauté the onions and garlic until softened. Add the carrots, celery, red pepper, oregano and basil and cook for another 5 minutes. Pour in the chicken broth and add the tomatoes. Bring to a boil then reduce heat to low. Add the chicken and green beans and simmer for 15-20 minutes or until vegetables are tender. Season with salt and pepper to taste.
