Vegan King Cake, Easy to Make

This vegan king cake is a delicious and healthy way to celebrate the holidays. It’s easy to make, and can be enjoyed by everyone!

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup vegan margarine
  • 3/4 cup almond milk (or other non-dairy milk)
  • 1/4 cup sugar
  • 2 tablespoons ground flaxseed
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg

Preheat oven to 375°F (190°C). Grease an 8-inch round baking pan with oil or vegan margarine. In a medium bowl, whisk together the flour, baking powder, and salt. In a separate bowl, cream together the vegan margarine and sugar until light and fluffy. Add the ground flaxseed and mix well. Slowly add in the almond milk and mix until combined.

Add the wet ingredients to the dry ingredients and mix until just combined. Pour into prepared pan and spread evenly. Bake for 25 minutes, or until golden brown on top and a toothpick inserted into center comes out clean. Let cool completely before serving.
