- 1/2 cup vegan butter
- 1 cup light brown sugar
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 2 cups rolled oats
Preheat oven to 350°F (175°C). In a large bowl, cream together the butter and sugar until light and fluffy. Add the vanilla extract and mix until combined. Add the baking soda and oats, and mix until combined.
Line a baking sheet with parchment paper or use a non-stick baking mat. Drop the dough by tablespoonfuls onto the prepared baking sheet. Bake for 10 minutes, or until golden brown. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
