- 1 cup all-purpose flour
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil
- 1 1/2 cups almond milk (or other non-dairy milk)
In a medium bowl, whisk together the flour, sugar, and salt. Make a well in the center and pour in the oil and almond milk. Whisk until smooth.
- Heat a lightly greased non-stick skillet over medium heat.
- Pour 1/4 cup of batter into the skillet and swirl to coat.
- Cook until lightly browned on the bottom, about 1 minute.
- Flip with a spatula and cook for an additional 30 seconds.
Repeat with remaining batter. Serve warm with desired toppings.
