Ingredients:
- 1 can black beans
- 1 can pinto beans
- 2 cups cooked brown rice
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1/4 cup lime juice
- 1/4 cup olive oil
- 2 tablespoons chili powder
- Salt and pepper to taste
Directions:
- In a medium-sized bowl, combine the black and pinto beans. Set aside.
- In a large bowl, mix together the cooked rice, corn kernels, bell pepper, lime juice, olive oil, chili powder, salt and pepper.
- Stir in the beans and combine everything together.
