Vegan Burrito Bowl, Mexico Comes to You!

Bring a little Mexican flavor to your table with this vegan burrito bowl. Packed with fiber-rich beans, tender veggies, and a flavorful sauce, it’s an easy weeknight meal.


  • 1 can black beans
  • 1 can pinto beans
  • 2 cups cooked brown rice
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 2 tablespoons chili powder
  • Salt and pepper to taste


  1. In a medium-sized bowl, combine the black and pinto beans. Set aside.
  2. In a large bowl, mix together the cooked rice, corn kernels, bell pepper, lime juice, olive oil, chili powder, salt and pepper.
  3. Stir in the beans and combine everything together.

Serve warm and enjoy!
