Vegan and Gluten-Free Christmas Roast with Walnuts

This vegan and gluten-free Christmas roast is the perfect centerpiece for your holiday dinner. Made with walnuts, mushrooms, and a mix of herbs, this dish is full of flavor and texture. Serve it alongside mashed potatoes, roasted vegetables, or your favorite sides for a festive meal.


  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups walnuts, chopped
  • 1 cup mushrooms, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried sage
  • Salt and pepper to taste


  1. Preheat oven to 375 degrees F.
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  3. Add walnuts, mushrooms, thyme, rosemary, sage, salt, and pepper. Cook until fragrant and the nuts are lightly toasted, about 5 minutes.
  4. Transfer mixture to an oven-safe casserole dish. Press into an even layer.
  5. Bake for 25 minutes until golden brown.
