This Tunisian Chicken Tajine is a delicious, flavorful dish that is sure to become a family favorite. It’s made with succulent chicken and vegetables cooked in a rich tomato-based sauce, and it’s perfect for any special occasion or weeknight meal.
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 boneless skinless chicken breasts, cut into cubes
- 1 red bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1/2 teaspoon cinnamon
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (14.5 oz) can chickpeas, drained and rinsed
- Salt and black pepper, to taste
Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the chicken and cook until lightly browned. Add the bell pepper, cumin, coriander, turmeric, paprika and cinnamon and cook for 1 minute. Add the tomatoes with their juices and stir to combine.
Bring to a simmer and reduce heat to low. Cover pot and simmer for 20 minutes. Uncover pot and add chickpeas. Simmer for an additional 10 minutes or until liquid is reduced.
Season with salt and black pepper to taste before serving.
