Tomatoes Stuffed with Millet and Roasted Chicken Leftovers

This is a delicious and nutritious recipe for tomatoes stuffed with millet and roasted chicken leftovers. The millet gives the dish its unique texture, while the roasted chicken adds a hint of smokiness.

Ingredients: 4 large tomatoes, 1 cup cooked millet, 1 cup diced roasted chicken, 1/2 cup chopped onion, 2 cloves garlic minced, 1 teaspoon dried oregano, 2 tablespoons olive oil, salt and pepper to taste

Instructions:

  • Preheat oven to 375°F (190°C).
  • Cut the tops off the tomatoes and scoop out the centers.
  • In a bowl, mix together the millet, diced chicken, onion, garlic and oregano.
  • Stuff each tomato with the mixture and place in a baking dish.
  • Drizzle with olive oil and season with salt and pepper.
  • Bake for 25-30 minutes or until tomatoes are tender.
