Three Winter Vegetable Verrines

This winter vegetable verrine is a delicious and healthy way to get your daily dose of vegetables. Perfect for lunch or dinner, each bite is filled with flavorful and nutritious ingredients. The combination of roasted vegetables, creamy ricotta cheese, and crunchy nuts makes for a delightful treat that everyone will love.

To make this tasty dish you will need the following ingredients:

  • 1 large sweet potato, peeled and diced
  • 1 red bell pepper, seeded and diced
  • 1 yellow bell pepper, seeded and diced
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups ricotta cheese
  • ½ cup chopped walnuts

Preheat oven to 375°F. Place sweet potato, bell peppers, onion, olive oil, salt and pepper in a large bowl. Toss to coat evenly. Spread the vegetables onto a baking sheet lined with parchment paper. Roast for 20-25 minutes or until vegetables are tender.

Divide the ricotta cheese among three individual verrines or glass dishes. Top with roasted vegetables and sprinkle with chopped walnuts. Serve immediately.
