This tajine of spiced marinated chicken is a delicious and easy meal that will transport you to Morocco. It combines the sweetness of spices like cardamom, cinnamon and cumin with the freshness of citrus and herbs.
- 1 kg (2 lb) of chicken thighs
- 3 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cardamom
- 1 teaspoon ground cinnamon
- 2 cloves garlic, minced
- 1 onion, diced
- 1 lemon, juiced and zested
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh mint
- Salt and pepper to taste
In a large bowl, combine the olive oil, cumin, coriander, cardamom, cinnamon, garlic, onion, lemon juice and zest. Mix until all ingredients are well combined. Add the chicken thighs to the bowl and mix until they are well coated in the marinade. Cover and refrigerate for at least 2 hours or overnight.
When ready to cook preheat oven to 180°C (350°F). Place chicken in a roasting tray along with any remaining marinade. Roast for 30 minutes or until cooked through.
Serve with couscous or other sides of your choice.
