- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground ginger
- 1/2 teaspoon turmeric
- 4 chicken thighs, skin on & bone in
- 2 cups chicken broth
- 4 quinces, peeled & sliced into wedges
Heat the olive oil in a large skillet over medium-high heat. Add the garlic and onion and sauté until softened, about 5 minutes. Add the spices and stir to combine. Add the chicken thighs and cook until golden brown on both sides, about 8 minutes.
Add the chicken broth to the pan and bring to a boil. Reduce heat to low and simmer for 10 minutes. Add the quince wedges to the pan and simmer for 15 minutes or until chicken is cooked through and the quinces are tender.
Serve hot with couscous or rice.
