Tajine of Chicken with Prunes

This delicious tajine of chicken with prunes is a great way to enjoy a meal. It’s full of flavor and will leave your taste buds wanting more. Start by gathering the ingredients:

  • 1 onion, chopped
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 6 boneless, skinless chicken thighs, cut into 1-inch cubes
  • 2 cups chicken broth
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/2 cup dried prunes, halved

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add in the onions and cook for about 5 minutes until they start to soften. Add in the ginger, cumin and garlic and cook for another minute. Add in the chicken cubes and cook until they are lightly browned on all sides.

Add in the chicken broth, honey and orange juice. Stir everything together and bring to a boil. Reduce heat to low and simmer for 25 minutes or until the chicken is cooked through.

Add in the prunes and simmer for another 10 minutes. Serve over couscous or rice.
