This delicious tajine of chicken with prunes is a great way to enjoy a meal. It’s full of flavor and will leave your taste buds wanting more. Start by gathering the ingredients:
- 1 onion, chopped
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 6 boneless, skinless chicken thighs, cut into 1-inch cubes
- 2 cups chicken broth
- 1/4 cup honey
- 1/4 cup orange juice
- 1/2 cup dried prunes, halved
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add in the onions and cook for about 5 minutes until they start to soften. Add in the ginger, cumin and garlic and cook for another minute. Add in the chicken cubes and cook until they are lightly browned on all sides.
