Tajine of Chicken with Prunes and Almonds

Tajine of chicken with prunes and almonds is a delicious Moroccan dish that is both healthy and flavorful. It’s easy to make, and can be served as a main meal or side dish.

  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt, to taste
  • 4 boneless, skinless chicken thighs, cubed
  • 1 cup chicken broth
  • 2 cups pitted prunes
  • 1/4 cup slivered almonds (optional)

In a large skillet over medium heat, sauté the onion in the olive oil until softened. Add the garlic, cumin, turmeric, paprika and cinnamon. Stir to combine and season with salt. Add the chicken cubes and cook until lightly browned. Pour in the chicken broth and bring to a simmer.

Add the prunes and simmer for 10-15 minutes until the chicken is cooked through. If using almonds, add them during the last few minutes of cooking. Serve hot with couscous or rice.
