Tajine of Chicken with Figs

This tajine of chicken with figs is a delicious Moroccan dish that’s easy to make. The combination of sweet figs and tart lemons is a perfect match for the juicy chicken. Serve with couscous or rice to soak up all the wonderful flavors.

  • 1 cut-up chicken, about 2 pounds
  • 3 tablespoons olive oil
  • 2 teaspoons ras el hanout (Moroccan spice blend)
  • 2 large onions, chopped
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 teaspoon honey
  • 12 ounces fresh figs, halved

Heat the oil in a large skillet over medium heat. Add the chicken and sprinkle with the ras el hanout. Cook, stirring occasionally, until the chicken is golden brown on all sides, about 10 minutes. Remove from the heat and set aside.

In a large pot over medium heat, sauté the onions and garlic in a bit of olive oil until softened, about 5 minutes. Add the broth, lemon juice, and honey and stir to combine. Return the chicken to the pot and bring to a simmer. Cover and cook for 20 minutes.

Add the figs to the pot and cook for an additional 10 minutes. Serve hot with couscous or rice.
