Ingredients:
- 4 chicken thighs, skin removed
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- Salt and pepper to taste
- 1 cup chicken broth
- 3 cups fresh figs, quartered
- 1/2 cup walnuts, chopped
Instructions:
- Heat the oil in a large skillet over medium-high heat. Add the chicken thighs and cook until golden brown on both sides. Remove from the pan and set aside.
- Add the onion and garlic to the pan and cook until the onion is soft and translucent. Add the paprika, cumin, coriander, ginger, cinnamon, salt and pepper to the pan and stir to combine.Add the chicken broth to the pan and bring to a boil. Add the chicken thighs back into the pan along with any juices from them.
