This tajine of chicken with apricots and prunes is the perfect dish for a unique and delicious meal. The combination of sweetness from the fruits, combined with the spices and aromas of the tajine, will leave your taste buds satisfied.
- 1 whole chicken, cut into pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper, to taste
- 1 cup chicken broth or water
- 1/2 cup dried apricots, halved
- 1/2 cup prunes, halved
Heat the oil in a large skillet over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until golden brown on all sides. Transfer to a plate.
Add the onion to the skillet and cook until softened, about 5 minutes. Add the garlic, cumin, ginger, cinnamon, and cayenne pepper (if using). Cook for 1 minute longer.
Return the chicken pieces to the skillet. Pour in the broth or water and bring to a boil. Reduce heat to low and simmer for 15 minutes.
