- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cinnamon
- 2 teaspoons ground cumin
- 1/4 teaspoon ground turmeric
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 4 chicken thighs or 2 chicken breasts, cut into cubes
- 2 cups chicken broth or water
- 1 cup dried prunes, pitted and chopped
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the spices and stir to combine. Add the chicken to the skillet and season with salt and pepper. Cook until lightly browned on all sides, about 5 minutes. Add the broth (or water) and prunes to the skillet and bring to a simmer. Cover the skillet with a lid and reduce heat to low. Simmer for 20 minutes, or until the chicken is cooked through.
