This tajine recipe is a delicious combination of juicy chicken and flavorful vegetables. The dish is cooked slowly in a clay pot, resulting in an aromatic, flavorful meal.
- 4-5 chicken thighs
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 1 red pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground turmeric
- Salt and pepper to taste
In a large skillet or tajine pot, heat some oil over medium heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken from the pan and set aside.
Add the onion and garlic to the pan and cook until softened. Add the carrots and red pepper and cook for another few minutes until slightly softened. Add the spices (cumin, paprika, ginger, turmeric) and season with salt and pepper to taste.
Return the chicken to the pan and mix everything together. Cover with a lid or foil and cook over low heat for about 30 minutes until the chicken is cooked through. Serve hot with some couscous.
