This classic Moroccan tajine is a savory dish of chicken simmered with fragrant spices, sweet dates and flavorful olives. Serve it with couscous or another grain to soak up the delicious sauce.
- 1 whole chicken, cut into 8 pieces
- 2 tablespoons olive oil
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 tablespoons Ras el Hanout spice blend
- 1 teaspoon ground ginger
- 1/2 teaspoon saffron threads
- 1/4 teaspoon ground cumin
- 1 can (14.5 ounces) diced tomatoes
- 1 cup green olives
- 12 dried dates, pitted and halved
Heat the oil in a large, deep skillet over medium-high heat. Add the chicken pieces and cook until golden brown on both sides. Remove from the pan and set aside.
Add the onions and garlic to the pan and cook until softened. Add the Ras el Hanout, ginger, saffron and cumin; stir to combine. Add the tomatoes, olives and dates; stir to combine. Return the chicken to the pan; reduce heat to low and cover. Simmer for 25 minutes or until chicken is cooked through.
Serve hot with couscous or other grain.
