Tajine de poulet aux citrons confits et pruneaux

This traditional meal is a delicious combination of chicken, lemons, and prunes. It’s easy to make and will be a hit with your family!

  • 3 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 onion, diced
  • 2 pounds of boneless chicken thighs, chopped into small pieces
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground ginger
  • Salt and pepper to taste
  • 2 tablespoons of tomato paste
  • 1/4 cup of water
  • 3 preserved lemons, thinly sliced
  • 1/2 cup of pitted prunes, roughly chopped

Heat the oil in a large pan over medium heat. Add the garlic and onion and cook until softened. Add the chicken and spices and cook for 5 minutes or until the chicken is cooked through.

Stir in the tomato paste and water. Simmer for 10 minutes or until the sauce has thickened. Add the preserved lemons and prunes and simmer for another 10 minutes.

Serve with couscous or rice.
