Tajine de poulet aux abricots

  • 4 chicken thighs
  • 1/4 cup olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon saffron threads
  • 1 cup chicken broth
  • 3/4 cup dried apricots, chopped


  1. In a large skillet over medium heat, heat the olive oil. Add the chicken thighs and cook until golden brown and cooked through, about 8 minutes per side.
  2. Remove the chicken from the pan and set aside.
  3. Add the onion and garlic to the pan and cook until softened, about 5 minutes.
  4. Add the cumin, paprika, and saffron to the pan. Stir to combine.
  5. Add the chicken broth to the pan and bring to a simmer.
  6. Return the chicken to the pan along with the chopped apricots. Simmer for 10-15 minutes until sauce is thickened.
