Tajine de poulet

Tajine de poulet is a classic Moroccan dish made with chicken, potatoes, and spices. The ingredients are cooked in a clay pot called a tajine, which has a conical lid that traps in the steam, creating a flavorful and tender dish. To make this tajine, you will need:

  • 2 pounds of chicken thighs or breasts
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground ginger
  • 1/2 teaspoon of ground turmeric
  • 1/4 teaspoon of cayenne pepper (optional)
  • 1 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of raisins or other dried fruit (optional)
  • 2 potatoes, peeled and cut into cubes

To make the tajine, heat the olive oil in a large skillet over medium heat. Add the onions and garlic and sauté until softened. Add the chicken pieces to the skillet and season with the ginger, turmeric, cayenne (if using), salt, and pepper. Cook for 5-7 minutes until the chicken is lightly browned.

Transfer the contents of the skillet to a tajine or Dutch oven. Add the potatoes and optional raisins or other dried fruit to the pot. Cover with 1-2 cups of water and bring to a boil over high heat. Reduce heat to low and simmer for 25-30 minutes until potatoes are tender and chicken is cooked through.

Serve hot with couscous or your favorite grain.
