Tajine Chicken with Preserved Lemons and Olives

This is the perfect recipe for a flavorful, aromatic meal. The combination of succulent chicken, preserved lemons, and olives creates a unique dish that can be enjoyed by all.

  • 1 whole chicken cut into 8 to 10 pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon paprika
  • 3 large onions, chopped
  • 2 preserved lemons, sliced into thin strips
  • 1 cup green olives, pitted and halved
  • Salt and pepper to taste

In a large skillet over medium heat, heat the olive oil. Add the chicken pieces and cook until golden brown on both sides. Remove from the pan and set aside.

Add the garlic, ginger, cumin, turmeric and paprika to the pan and cook for 1 minute. Add the onions and cook until softened. Add the reserved chicken pieces back to the pan along with the preserved lemons and olives. Cover with a lid and simmer for 35-40 minutes or until chicken is cooked through.

Season with salt and pepper to taste before serving.
