Tajine Chicken Vegetables with Preserved Lemon and Green Olives

This delicious tajine is a classic Arabian recipe that combines succulent chicken with a variety of vegetables and preserved lemon, combined with the savory flavor of green olives.


  • 1 whole chicken, cut into pieces
  • 2 onions, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 zucchini, chopped
  • 1 red bell pepper, diced
  • 3 tomatoes, chopped
  • 1 preserved lemon, chopped
  • 1/2 cup green olives, pitted and roughly chopped
  • 1 teaspoon paprika
  • Salt and pepper to taste


  1. Heat a large pot or skillet over medium heat and add the chicken pieces. Cook for 8-10 minutes until golden brown.
  2. Add the onions and garlic to the pot and stir to combine. Cook until the onions are soft and translucent.
  3. Add the carrots, zucchini, bell pepper, tomatoes, preserved lemon, olives, paprika, salt and pepper. Stir to combine.
  4. Cover the pot and reduce heat to low. Simmer for 20 minutes until the vegetables are cooked through.
