This delicious tajine is a classic Arabian recipe that combines succulent chicken with a variety of vegetables and preserved lemon, combined with the savory flavor of green olives.
- 1 whole chicken, cut into pieces
- 2 onions, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 1 zucchini, chopped
- 1 red bell pepper, diced
- 3 tomatoes, chopped
- 1 preserved lemon, chopped
- 1/2 cup green olives, pitted and roughly chopped
- 1 teaspoon paprika
- Salt and pepper to taste
- Heat a large pot or skillet over medium heat and add the chicken pieces. Cook for 8-10 minutes until golden brown.
- Add the onions and garlic to the pot and stir to combine. Cook until the onions are soft and translucent.
- Add the carrots, zucchini, bell pepper, tomatoes, preserved lemon, olives, paprika, salt and pepper. Stir to combine.
- Cover the pot and reduce heat to low. Simmer for 20 minutes until the vegetables are cooked through.
