This delicious tajine dish combines the sweetness of candied lemon and green olives for an amazing flavor. It’s quick to prepare and makes a great meal for any occasion.
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound chicken thighs, cut into cubes
- 3 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- Salt and pepper to taste
In a large skillet, heat the olive oil over medium heat. Add the onions and garlic and cook until softened, about 5 minutes. Add the chicken cubes and stir to combine. Sprinkle in the cumin, coriander, turmeric, salt and pepper. Cook for 8 minutes or until the chicken is cooked through.
- 1/2 cup pitted green olives, halved
- 4 small candied lemons, thinly sliced
Add the green olives and candied lemons to the skillet and cook for another 2 minutes until warmed through. Serve with rice or couscous.
