Tajine is a dish originating in Northern Africa and is typically cooked in an earthenware pot. This savory chicken tajine recipe is easy to prepare and so delicious!
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 pounds skinless, boneless chicken thighs or breasts, cut into 1-inch cubes
- 1 red bell pepper, diced
- 1 (14.5 ounce) can diced tomatoes with juice
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic; cook and stir until the onion is tender. Stir in the ginger, cumin, paprika, cayenne pepper, salt, and black pepper; cook for 1 minute. Add the chicken cubes to the skillet and cook until lightly browned on all sides. Stir in the red bell pepper and tomatoes with juice.
Bring to a boil; reduce heat to low, cover, and simmer until the chicken is cooked through and no longer pink in the center, about 25 minutes. Serve hot.
