This delicious stuffed mushrooms recipe is full of flavor and perfect for an appetizer or a side dish. The combination of cheese and peppers makes the mushrooms savory and irresistible.
- 4-6 large mushrooms
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 cup shredded cheese
- Salt and pepper to taste
Preheat oven to 375°F. Clean mushrooms with a damp cloth, remove stems, and place them in a baking dish.
In a skillet, heat olive oil over medium-high heat. Add onions, bell peppers, garlic, and salt and pepper. Cook until vegetables are softened, about 5 minutes. Remove from heat.
Stuff each mushroom cap with the vegetable mixture. Sprinkle cheese on top of each stuffed mushroom.
Bake for 15 minutes or until cheese is melted and mushrooms are cooked through.
