Spicy Chorizo and Pepper Chicken Breast in Tomato Sauce

This spicy chorizo and pepper chicken breast in tomato sauce dish is a delicious and easy to make meal. With just a few ingredients, you can create a flavorful meal that everyone will love. Serve it as part of a larger meal or as a light dinner with some crusty bread.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup chopped chorizo sausage
  • 1 red bell pepper, seeded and diced
  • 1 teaspoon smoked paprika
  • 1 (14.5 ounce) can diced tomatoes
  • Salt and black pepper, to taste

Preheat oven to 375 degrees F. Place chicken breasts in an oven-safe baking dish. Drizzle with olive oil and season with salt and pepper. Bake for 20 minutes or until cooked through.

Meanwhile, heat a large skillet over medium heat. Add the onion and cook for 3-4 minutes until softened. Add garlic and chorizo sausage and cook for another 2-3 minutes until fragrant. Add red bell pepper, smoked paprika, canned tomatoes, salt and black pepper. Simmer for 8-10 minutes until vegetables are tender.

Remove chicken from the oven and spoon the tomato mixture over the top of each piece of chicken. Return to the oven for an additional 10 minutes or until sauce is bubbling.

Serve the chicken with some crusty bread or over rice or pasta.
