This spicy chicken and mustard potatoes dish is an easy and tasty meal that is perfect for a busy weeknight.
- 4 chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon chili powder
- Salt and pepper, to taste
- 2 pounds potatoes, peeled and cubed
- 2 tablespoons Dijon mustard
Preheat oven to 375°F. Place chicken in a baking dish. Drizzle with olive oil and sprinkle with garlic powder, paprika, cumin, chili powder, salt, and pepper. Bake for 25 minutes or until chicken is cooked through.
Meanwhile, place potatoes in a pot of boiling salted water. Boil for 10-15 minutes or until potatoes are tender. Drain potatoes and return to the pot.
Stir in mustard until potatoes are evenly coated. Serve with cooked chicken.
