Soup with Vegetables

This soup with vegetables is a great way to enjoy a delicious and healthy meal. It’s easy to prepare, and the flavors will tantalize your taste buds.

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 4 cups vegetable broth
  • 2 potatoes, peeled and diced
  • 1 zucchini, diced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • Salt and pepper to taste

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the carrots and celery and cook for another 3 minutes. Pour in the vegetable broth and add the potatoes, zucchini, oregano and thyme. Bring to a boil, then reduce heat to low and simmer for 20 minutes. Season with salt and pepper.

Serve hot with crusty bread or croutons.
