This easy and flavorful stir fry is a great way to get your daily dose of vegetables. It’s quick to make, and the soba noodles are a delicious addition to the mix. Serve it as a main dish or as a side dish with your favorite protein.
- 1 package soba noodles
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 cup broccoli florets
- 1 cup snow peas
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon brown sugar
Cook the soba noodles according to package instructions. Drain and set aside.
Heat the oil in a large skillet or wok over medium-high heat. Add the onion and bell pepper and cook for 3 minutes. Add the broccoli, snow peas, and garlic and cook for another 3 minutes or until vegetables are tender-crisp.
Add the cooked noodles to the pan along with the soy sauce and brown sugar. Toss everything together and cook for 1 minute or until everything is heated through.
Serve hot.
