Smoked Chicken Leftovers with Rice and Cancoillotte

This delicious and comforting dish combines smoked chicken leftovers with creamy cancoillotte cheese and rice. It’s a classic French recipe that makes the perfect weeknight dinner.


  • 1 cup cooked long grain white rice
  • 1/4 cup cold smoked chicken, diced
  • 1/4 cup cancoillotte cheese
  • 1 tablespoon olive oil
  • Salt and pepper, to taste


  1. In a medium skillet, heat the olive oil over medium heat. Add the diced smoked chicken and cook until warmed through.
