- 1 tablespoon olive oil
- 2 cloves garlic, crushed
- 1 onion, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 2 cups chicken stock
- 2 potatoes, peeled and cubed
- 2 cups smoked chicken, shredded
- Salt and pepper to taste
Heat the olive oil in a large saucepan over medium heat. Add the garlic, onion, cumin, coriander and chili powder. Cook for 2-3 minutes until fragrant.
Add the chicken stock, potatoes and smoked chicken. Bring to a boil then reduce heat and simmer for 15-20 minutes until the potatoes are tender.
