Smoked Chicken and Potato Curry (974)

This delicious recipe for smoked chicken and potato curry is a great way to give your meal a Caribbean taste. The smoked chicken, potatoes and spices combine to create a flavoursome dish that will please even the pickiest eaters. Serve it with steamed basmati rice or flatbread for a complete meal.

  • 1 tablespoon olive oil
  • 2 cloves garlic, crushed
  • 1 onion, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 2 cups chicken stock
  • 2 potatoes, peeled and cubed
  • 2 cups smoked chicken, shredded
  • Salt and pepper to taste

Heat the olive oil in a large saucepan over medium heat. Add the garlic, onion, cumin, coriander and chili powder. Cook for 2-3 minutes until fragrant.

Add the chicken stock, potatoes and smoked chicken. Bring to a boil then reduce heat and simmer for 15-20 minutes until the potatoes are tender.

Season with salt and pepper to taste before serving with steamed basmati rice or flatbread.
