Scrambled Eggs with Ratatouille

This is a delicious and healthy breakfast dish that combines the classic ratatouille with scrambled eggs. It’s easy to make and perfect for any morning.


  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 zucchini, chopped
  • 1/2 cup olives, pitted and chopped
  • 1/2 teaspoon oregano
  • Salt and pepper
  • 6 eggs


  1. Heat a large skillet over medium-high heat. Add the onion, bell pepper, and garlic and cook until softened, about 5 minutes.
  2. Add the tomatoes, zucchini, olives, oregano, salt, and pepper. Cook until the vegetables are tender and the liquid has evaporated, about 8 minutes.
  3. Crack the eggs into a bowl and season with salt and pepper. Reduce the heat to low and pour in the eggs. Use a spatula to gently scramble them until cooked through.
