Scrambled Eggs with Ratatouille-Scramble Recipe

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced

  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 eggs

In a large skillet over medium heat, heat the olive oil. Add the onion, garlic and bell pepper and cook until softened, about 5 minutes. Add the zucchini and season with oregano, salt and pepper. Cook until the vegetables are tender, about 8 minutes. Stir in the tomato paste.
