Roasted Chicken with Safran

This roasted chicken recipe with safran, lemon and garlic is a delicious way to enjoy a classic dish. The subtle flavor of the safran adds a unique twist to the traditional flavors of the chicken. Serve it with your favorite side dishes or on its own for a simple and satisfying meal.

  • 1 whole chicken (about 4-5 pounds)
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • ½ teaspoon of saffron threads
  • 1 teaspoon of salt
  • 1 teaspoon of freshly ground black pepper
  • 1 lemon, cut into wedges

Preheat oven to 350 degrees Fahrenheit.

  1. In a small bowl, mix together garlic, olive oil, saffron threads, salt and pepper. Rub this mixture all over the chicken.
  2. Place lemon wedges inside the cavity of the chicken.
  3. Place chicken in roasting pan and roast for 1 hour and 20 minutes or until an internal temperature of 165 degrees Fahrenheit is reached.

Remove from oven and let rest for 10 minutes before serving. Enjoy!
