Roasted Chicken with Saffron

This roasted chicken recipe is quick and easy to make, yet full of flavor. The saffron adds a beautiful golden hue to the dish, and the spices give it an exotic aroma.

Ingredients (serves 4):

  • 4 chicken breasts
  • 1 teaspoon of saffron threads
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground cumin
  • ½ teaspoon of ground coriander
  • 1 teaspoon of paprika
  • Salt and pepper to taste


  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix the saffron threads with 1 tablespoon of hot water and set aside.
  3. In a separate bowl, mix together the olive oil, cumin, coriander, paprika, salt and pepper.
  4. Brush each chicken breast with the spiced oil mixture.
  5. Place the chicken in a baking dish and pour the saffron mixture over it.
  6. Bake in preheated oven for 30-35 minutes or until cooked through.
