This roasted chicken recipe is quick and easy to make, yet full of flavor. The saffron adds a beautiful golden hue to the dish, and the spices give it an exotic aroma.
Ingredients (serves 4):
- 4 chicken breasts
- 1 teaspoon of saffron threads
- 2 tablespoons of olive oil
- 1 teaspoon of ground cumin
- ½ teaspoon of ground coriander
- 1 teaspoon of paprika
- Salt and pepper to taste
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix the saffron threads with 1 tablespoon of hot water and set aside.
- In a separate bowl, mix together the olive oil, cumin, coriander, paprika, salt and pepper.
- Brush each chicken breast with the spiced oil mixture.
- Place the chicken in a baking dish and pour the saffron mixture over it.
- Bake in preheated oven for 30-35 minutes or until cooked through.
