Roasted Chicken and Italian Potatoes

This roasted chicken and Italian potatoes dish is a classic and easy-to-make meal that packs in flavor. The potatoes are seasoned with rosemary and garlic, then roasted along with the chicken for a delicious one-pan dinner.


  • 4 boneless, skinless chicken thighs
  • 4 cloves garlic, minced
  • 1 tablespoon rosemary leaves, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • 1 pound small red potatoes, quartered


  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix together garlic, rosemary, olive oil, balsamic vinegar, salt and pepper. Add chicken thighs to the bowl and coat them with the mixture.
  3. Spread the potatoes on a baking sheet. Place the seasoned chicken thighs on top of the potatoes. Bake for 30 minutes or until chicken is cooked through.
