This recipe is an easy yet delicious way to prepare a guinea fowl for a special occasion. The combination of spices used makes this a truly unique and aromatic dish.
Ingredients:
- 1 whole guinea fowl, about 2 kg
- 3 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 2 teaspoons dried thyme
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 cloves garlic, minced
Instructions:
- Preheat the oven to 200 C/400 F.
- In a small bowl, combine the olive oil, salt, pepper, thyme, cumin, coriander and garlic. Mix well to form a paste.
- Rub the paste all over the guinea fowl. Place in a roasting pan and roast in the preheated oven for 1 hour 15 minutes or until the internal temperature reaches 75 C/165 F.
- Remove from the oven and let rest for 10 minutes before serving.
