This roast chicken with soy sauce is a delicious dish from the Far East. It is perfect for a quick and easy weeknight dinner. The soy sauce gives the chicken a great flavor and the vegetables add a nice crunch to the meal. Serve with steamed rice for a complete meal.
- 4-6 chicken drumsticks
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- 1 tablespoon vegetable oil
- 2 carrots, peeled and chopped
- 2 stalks celery, chopped
- Preheat oven to 375F (190C). Place chicken drumsticks in a baking dish.
- In a small bowl, combine soy sauce, honey, garlic powder, ground ginger and vegetable oil. Mix together until combined.
- Pour the soy sauce mixture over the chicken drumsticks and turn to coat all sides.
- Add carrots and celery to the baking dish around the chicken.
- Bake in preheated oven for 40-50 minutes or until cooked through and golden brown.
