Roast Chicken with Lemon

This simple roast chicken with lemon is a delicious and easy weeknight dinner. Roasting the chicken in a hot oven gives it a crispy, golden skin and the lemon adds a hint of citrus flavor to the meat. Serve with your favorite side dishes for a complete meal.

  • 1 whole chicken
  • 1 lemon, quartered
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: fresh herbs such as rosemary or thyme

Preheat the oven to 425°F (220°C). Place the chicken in a roasting pan and rub with olive oil. Squeeze the juice from the lemon quarters over the chicken and sprinkle with salt and pepper. Place the lemon quarters inside the cavity of the chicken. Roast for 45 minutes to 1 hour, or until cooked through (the internal temperature should be 165°F/75°C). If desired, add fresh herbs before roasting.
