- 1 whole chicken
- 1 lemon, quartered
- 3 tablespoons olive oil
- Salt and pepper to taste
- Optional: fresh herbs such as rosemary or thyme
Preheat the oven to 425°F (220°C). Place the chicken in a roasting pan and rub with olive oil. Squeeze the juice from the lemon quarters over the chicken and sprinkle with salt and pepper.
