This Roast Chicken with Lemon and Garlic is an easy to make, yet delicious dish that’s sure to please! The combination of garlic and lemon give this chicken a bright flavor that can’t be beat.
- 1 whole chicken, about 3-4 lbs
- 1 head of garlic, cloves peeled
- 2 lemons, one quartered and one sliced into rounds
- 3 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs such as oregano or thyme (optional)
Preheat the oven to 375°F. Place the chicken in a roasting pan and rub it with 1 tablespoon of olive oil. Season the chicken with salt and pepper. Stuff the cavity of the chicken with the garlic cloves, lemon quarters and fresh herbs (if using). Arrange the sliced lemon rounds around the chicken in the roasting pan.
Brush the remaining olive oil over the top of the chicken. Roast for 1 hour or until a thermometer inserted into the thickest part of the thigh registers 165°F. Let rest for 10 minutes before carving.
