Roast Chicken with Bruschetta-style Topping

This delicious roast chicken dish is the perfect dinner for a family gathering. The fragrant herbs and flavorful cheese make it an instant hit!

Ingredients:

  • 4 chicken breasts, skinless and boneless
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup chopped fresh basil leaves
  • 1/2 cup shredded mozzarella cheese

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a baking dish with 1 tablespoon of olive oil.
  2. In a small bowl, combine garlic powder, oregano, salt, pepper, and remaining olive oil. Mix until well combined.
  3. Place chicken breasts into the greased baking dish. Brush each breast with the olive oil mixture.
  4. Bake in preheated oven for 20 minutes.
  5. Sprinkle basil leaves and mozzarella cheese over each chicken breast. Return to oven and bake for an additional 10 minutes or until chicken is cooked through and cheese is melted.
